Raventós i Blanc Blanc de Blancs is a sparkling wine made by Raventós i Blanc, the winery is situated in the centre of the viticulture area in Alt Penedès.
The climate of the area where the vines are found is Mediterranean, characterised by gentle winters and warm and dry summers, where thermal variations are not very pronounced thanks to the proximity to the sea. The Raventós i Blanc vines are encountered between mountain ranges, between Sierra del Litoral in the east, Montserrat in the North and Sierra d’en Compte in the west. La Sierra Litoral protects from the excess moisture in the costal areas. On the other hand, Montserrat and Sierra d’en Compte make barriers for winds and low temperatures from the Pyrenees.
Thanks to the location, this is a suitable climate in order to obtain good grapes.
This cava is a coupage of macabeo, xarel·lo, parellada and malvasía de Sitges grown in two estates: La Plana and El Viader
La Plana is a north/north east facing estate located on clay-loam soils. This estate grows Xarel·lo and Macabeo varieties.
On the other hand, we have the El Viader estate, Parellada vines that are south east facing planted on sandy-loamy soils with a low content of organic matter.
Raventós i Blanc is harvested by hand and follows an ecological viticulture.
As for the production, after a long pressing at a low pressure, there is a static racking at a low temperature. Afterwards, they continue with the first fermentation in stainless steel deposits at a controlled temperature, each variety separately. Once the ensemble is done, the wine undergoes a second fermentation in the bottle for 15 months in rhyme.

The Blanc de Blancs gets its name from the three native white grape varieties: Macabeu, Xarel·lo, and Parellada. They come from the Vinya del Llac, grown in clay soils and influenced by the lake on the Raventós estate. The influence of the lake in this symbolic vineyard moderates the climatic conditions, avoids heatwaves and favors long ripening. This is the first Blanc de Blancs blend to incorporate a fourth white grape variety: Malvasia de Sitges. The Malvasia de Sitges is a variety that had almost disappeared and which was recovered from the estate. Malvasia de Sitges has very high natural acidity, ripens very evenly, and is intensely and aromatically complex.
